Bok Choy with shiitakes and sesam seeds

Today I found some Bok Choy at the grocery store and I immeadiatly had to buy it. I really Love Bok Choy that much. My first taste with Bok Choy was of course an asian dish, and since then I buy it when ever I see it. This time I tried it with mushrooms - though I don't really love the mushrooms but sometimes I make them.

Bok Choy with Shiitakes and Sesame Seeds


 
Bok Choy with Shiitakes and Sesame Seeds
1 t coconut oil
3.5 oz fresh shiitake mushrooms, sliced
1/2 t ginger, minced
1 clove garlic, minced (or use a clove from your garlic confit, if you made some!)
1 head boy choy, chopped
1/2 c water
1 t wheat-free tamari or coconut aminos
1 T sesame seeds
 
Heat coconut oil in a skillet over medium heat. Add mushrooms and saute for 3-4 minutes, stirring occasionally. Add ginger and garlic and saute for another 30 seconds to 1 minute. Add bok choy, water, and tamari or coconut aminos and stir, then cover with a lid. Allow to “steam” for 2 minutes, then stir and allow to steam again for another minute or so, until bok choy is tender-crisp. Remove lid and allow excess liquid to evaporate, stirring occasionally. Add sesame seeds and toss once more.
 
Serves 2-3.

Fattoush Pasta Salad

box Betty Crocker® Suddenly Salad® classic pasta salad mix
1/3
cup olive oil
1/4
cup fresh lemon juice
2
teaspoons all purpose Greek seasoning
1 1/2
cups coarsely chopped cucumber
1
cup coarsely chopped romaine lettuce
1
cup crumbled feta cheese (4 oz)
1
cup grape tomatoes, halved
1/2
cup thinly sliced zucchini, cut slices into quarters
1/3
cup thinly sliced radishes
1/3
cup chopped red onion
1/3
cup chopped fresh flat leaf parsley
1
tablespoon finely chopped fresh mint leaves
2
cups garlic flavored croutons
 
  • 1 Empty Pasta mix into 3-quart saucepan 2/3 full of boiling water. Gently boil uncovered 12 minutes, stirring occasionally.
  • 2 Drain pasta; rinse with cold water. Shake to drain well.
  • 3 In large bowl, stir together Seasoning mix, oil, lemon juice and Greek seasoning. Add pasta and all remaining ingredients; toss gently. Cover and refrigerate 1 hour to chill.
