Cream cheese rollups

I had another appointement about a job, and this one today would also be a good one, though not so good payed as probably the yesterday one, but lets see if I get one of them.

I still had some tortilla, and I wanted to use them before they get bad - which probably will take a while, but I was in the mood to something with them. A simple mexican dish was too easy and so I tryed to make an appetizer or when done bigger even a Lunch or sandwich recipe.

                 Quick 'n Easy Veggie Cream cheese rollups

 
 

Ingredients:

  • 1 package (8 count) flour tortillas (I like the tomato basil)
  • 1 (8 ounce) tub vegan herb cream "cheese"
  • 1 can (2.25 ounce) sliced black olives, drained
  • 1-2 cucumbers, peeled and chopped
  • 1 tomato, diced
  • salt and pepper, to taste

Directions

1. Spread vegan cream cheese liberally (though not too thick) on the tortilla. 2. Sprinkle black olives, cucumbers and tomatoes on one side of the tortilla.3. Sprinkle salt and freshly ground black pepper, to taste. Starting with side that has the goodies, roll it up like a log, as tightly as possible.4. Slice into 1" pieces.Enjoy!Alternative 1: use Vegenaise instead of cream cheese, and sliced veggie meats, lettuce and tomato, Alternative 2: Use hummus instead of cream cheese. Add black olives, tomatoes, etc, Alternative 3: Use peanut butter and jelly. I make these sometimes for my kids' school lunch.Serves: 4, Preparation time: 10 minutes'

                                     Spicy Mexican Salad

Ingredients

    • 2 cups corn kernels ( fresh or previously frozen)
    • 3 tomatoes, chopped
    • 2 avocados, ripe and chopped
    • 2 celery ribs, diced
    • 1 bell peppers, sliced ( any colour but green)
    • 1 cup sprouted lentils ( or sub black beans)
    • 1/2 cup fresh cilantro, chopped ( or sub parsley)
    • 3 green onions, sliced

    DRESSING

    • 1/4 fresh lime juice ( about 1-1 1/2 limes)
    • 2 tablespoons extra-virgin olive oil
    • 1 tablespoon flax seed oil
    • 2 tablespoons tamari ( 1 1/2-2 tbsp to taste)
    • 1 tablespoon agave nectar ( or other liquid sweetener)
    • 2 cloves garlic, minced
    • 1/2 teaspoon ground cumin
    • 1 teaspoon fresh chili, minced ( or sub 1/2 - 1 tsp chili powder)

Directions

  1. Mix up the dressing first and set aside for flavours to marry.
  2. Combine the salad ingredients in a large bowl.
  3. Add the dressing and toss.
