Christmas dinner

Hope you enjoyed a great christmas eve together with you're beloved ones!

We only celebrated on the 24th, as most of us got parents-in-law and wanted to celebrat with them as well.

For christmas eve I made the appetizers and my mother made the whole dinner. A lot of work. Therefore I invited them the next day and my mother could spend a free day from cooking. 

The dinner should be a light one for three persons. 

I craved my books, my mind and the recipes below are what I made. 

Enjoy your days off from work with skiing, relaxing in front of the fire or whatever, just hope you got a nice day.

Christmas Dinner

Appetizer



  • Preparation time:
15 minutes
  • Cooking time:
10 minutes
  • Total time:
25 minutes 
Makes: 16

Ingredients
25g trimmed kale, finely shredded leaves
50g blanched hazelnuts, toasted
1 pink grapefruit, peeled and segmented
 ½ Perfectly Ripe Avocado, peeled and stoned
16 individual chicory leaves (from about 2 large heads of chicory - 1 white, 1 red)

For the dressing:
2 tbsp extra virgin olive oil
1 tsp white wine vinegar
¼ x 20g pack tarragon, leaves only, finely chopped
1 tsp Dijon mustard
1. Plunge the shredded kale leaves into a pan of boiling water, return to the boil and cook for 30 seconds. Drain and plunge into cold water, then drain and dry on kitchen paper.
2. Roughly break up the nuts in a pestle and mortar. Cut the grapefruit and avocado into small cubes and place in a bowl with the kale and nuts.
3. Place all the dressing ingredients into a bowl, season and whisk to combine. Spoon a little salad into each chicory leaf and arrange on a serving plate.

Figchutney

Christmas is coming closer and closer. Holly time 
I really do like this time - if only it wouldn't be such stressfull at work. All the "end-of-year"-stuff that had to be done before Christmas. 
This year I did not even had the time to make a stop at the christmasmarket of even going to the city.

Luckely I don't wait till the last time to go for presents, I kept my eyes open trought the whole last 5 month, made it much quiter and easier around

Once when being at a congress in "Murten" (city in the middle centre of Switzerland) and using the free afternoon to walk around in the little, cute center of the city,  I entered a little store with all kind of special spices, gravys, snacks, mustard from Texas -wow! I was immediatly caught about the variousity and I knew that I would find some presents - and not even planing it before.    - That's the way I mostly get a present. The unexpected ones are the best.....

This year I had the idea to make a homemade present for every couple sitting at the decorated table, placed in front of theire plate.

The idea was pretty easy found, a chutney. 

I bought all the needed ingredients and filled the kitchen with a great spicy-sweet-taste in the air.

Figchutney




Cooking time: 40 Min. incl. cooling down

Ingredients:
2 Persons
For two Glasses (400ml)
8 fresh Figs or dried ones
1 knob piece of ginger
1 garlicknob
300 g Onions, chopped
80 g tried apricots
2 Cardamons
1 Tbsp. oil
1 staranis
70 g sugar
2 Tbsp. whitwine vinegar
250 ml red wine (or if you prefer balsamico)
Salt
fresh grounded black pepper

Direction:
1 Rinse figs, pat dry, peel and dice. Peel and chop ginger and garlic. Peel the onions. Dice along with the apricot. Crush cardamom pods.

2 Heat oil in a pot. Fry ginger, garlic, star anise and cardamom. Add onions and apricots and cook about 3 minutes. Pour vinegar and wine. Let simmer all together while stirring for about 15 minutes.

3 Add Figs and cook for a further 3 minutes, mix or puree everything trough (not if you desire chunchy bites). Allow Chutney to cool a little bit  and season with salt and pepper. Immediately fill in jars and seal. 

The chutney with fresh figs will be good for about 2 weeks, stored in the fridge. The chutney stay's longer good if you use dried figs. 

It is especially good with vegan meat and cheese.

chrunchy roasted sweeted amandes

Christmastime, always the time when you enjoy being together with your family, lighting the candles in the evening, maybe a fire in your chimnee. Hopefully some snowflakes falling outside - just so great. It's always a magic, special time. Unfortunatly most people don't really know why we're are celebrating Christmas and that's sad.

Anyway. Every years from the beginning of december till christmas we have a christmas market in the city (I posted pictures the year before) and beside clothes, goods, sweets, spices, candles a.s.o. there're alway the "houses" were they serve food and sweet things.

One thing I mostly buy during this christmas time are chrunchy roasted sweet almonds (thought I don't really like almonds) but those chrunchy ones just taste soo great - hard to resist.

This year I still hadn't the time to go to the market and therefore I decided to make them on myself. They are simple and quick done.

Kids will love them

Chrunchy roasted sweeted amandes



Ingredients: 
1 dl water
200 g sugarr
1 tsp. vanille sugar
maybe 1 hint of cinnamnon
200g unpeeled amandes

Direction:
Add everything exept the amandes into a pan and cook up. When cooking add the amandes. Cook under constantly stirring, till the sugar stick to the amandes and they look chrunchy. Shortly roast till amandes "shine". Immediatly give the roasted sweeted amandes to a lightly oiled backing sheet, spread out and let cool!

They taste chrunchy and sweet and of course so course. If you like amandes then you're defently going to love those chrunchy sweet roasted amandes. They are just tasting so great and they can be always bought during pre-christmas time at the christmas ferry. People just love it. No one can resist them ;)

Vegan Christmas Dinner

Appetizer

Veggie Pigs in Sun-dried Tomato Blankets

 
A succulent and compassionate alternative to the traditional recipe! Lovely as buffet food or as a starter.
Serves 4-8, depending on how hungry/greedy guests are and what else you have to serve
Time:                     10 minutes
                          
Ingredients:
1 jar of sun dried tomatoes in oil – better still, use the ready-to eat (slow-roasted) variety, even moister.
1 packet of vegan sausages (Fry’s, Redwood, LInda McCartney and Vegetarian Choice are all suitable – available from health food shops, Holland & Barrett – Linda Mac's from most supermarkets)
1 packet of cocktail sticks
 
Method:
1. Cook the sausages according to instructions on the packet. Let them cool a little.
2. Cut into bite size pieces on a chopping board.
3. Using a fork, take a sun dried tomato from the jar, shaking off any excess oil.
4. If a similar width to the sausage pieces, place the tomato over the top, then secure in place using a cocktail stick, piercing through one side to the other. If too big, cut in half.
5. Serve on a large sharing platter.

Avocado & Smoked Tofu Salad with Mustard Vinaigrette

 
Serves:                     4
Time:                     5-10 minutes
      
Ingredients:
2 large, ripe avocados
1 packet smoked tofu available from large supermarkets or health food stores. Taifun is the firmerst in texture. Cauldron, Taifun and Dragonfly are all good but softer so if you want it crispy, fry for a minute or two first
2 dsp sesame seeds
Salt and black pepper

Mustard vinaigrette 175ml/6fl oz extra virgin olive oil
75ml/3fl oz white wine vinegar
2 dsp (40ml) French or Dijon mustard
A little salt
Lots of freshly ground black pepper
Method:
1. In a pan, dry roast the sesame seeds over a high heat until starting to pop and brown. Keep stirring with a wooden spatula so they don't burn
2. Allow to cool
3. Meanwhile, make the vinaigrette: mix the oil, white wine vinegar, mustard, salt and black pepper in a jar - use a fork to dissolve mustard then put lid on jar and give it a good shake
4. Divide the avocados into halves, length-ways. Remove the stone and skin
5. Place each half on an individual serving plate and cut into 6 slices
6. Cut the smoked tofu into thin slices and insert in between avocado cuts
7. Season with a little salt
8. Pour the vinaigrette round then sprinkle seeds artistically over top of everything
9. Sprinkle black pepper over the salad and serve
10. The vinaigrette recipe makes quite a lot, but will keep for ages in a screw-top jar in the fridge. Alternatively, half or even quarter the quantities!

Cashew Nut Roast with a Choice of Two Stuffings & Red Wine Gravy


I cook this most Christmases and everyone loves it, including the meat-eaters! But it’s far too nice to limit to once a year. Serve with roast potatoes, mixed vegetables such as carrots, broccoli and sprouts - and gallons of gravy.
Top tip:
1. Save yourself time by making it the day before you want it then just re-heat in the oven covered with foil.
Serves:                     4 - 6
Time:                     20-30 minutes preparation plus 40 mins cooking time
                   
      
Ingredients:
Oil spray or 1 tbsp olive oil
1 medium leek, finely chopped
2 sticks celery, finely chopped
1 tbsp soya sauce
2 tbsp vegan margarine, eg Pure, Suma or Biona
350ml/generous 12fl oz hot water
1 tsp yeast extract (marmite, vegemite etc.)
550g/16oz cashew nuts - grind them in a food processor but not too fine. Leave some texture
2 tbsp soya flour (available from health stores)
2 tsp fresh herbs or 1 tsp dried
160g/6oz white bread crumbs
Sea salt and pepper to taste

Filling: choose from one of these
1 dsp olive oil
450g/1lb mushrooms, sliced medium
2 cloves garlic
1 dsp soya sauce
OR
1 pack smoked tofu, mashed roughly
1/2 large jar roasted red peppers, sliced fine
1 tsp soya sauce

Red Wine & Onion Gravy 2 tbsp miso
2 tbsp hot water
2 shallots or 1/4 red onion, finely chopped
1 tbsp olive oil
2 rounded tbsp wholemeal flour
240ml/9fl oz vegan stock, eg Green Oxo or Marigold red or purple tub
240ml/9fl oz vegan red wine
Salt and pepper to taste

 
Method:
1. Melt the margarine in a large saucepan and cook the celery and leek in it for a few minutes.
2. Preheat oven to 180°C/360°F/Gas Mark 4.
3. Meanwhile, make the filling of your choice.
Mushroom: cook garlic in olive oil until golden. Add mushrooms and cook for a few minutes. Add soya sauce. Let this cook gently, then drain off any liquid that’s left and reserve for gravy. Put mushroom garlic mix aside.
Smoked tofu: mix mashed tofu with red pepper pieces and soya sauce. Set aside.
4. Make the roast. Mix the yeast extract into the hot water (alternatively you could use any stock you like) and add this to the leek and celery.
5. Stir in the soya flour, nuts, herbs, breadcrumbs and salt and pepper and mix well. Allow to cool slightly while you grease a loaf tin.
6. Place half the nut roast mixture in the tin and press down well - then add the mushroom and garlic stuffing (pressing down well again) and place the rest of the nut roast mixture on top. Bake in the oven for about 40 minutes and allow to sit for a few minutes, covered. Turn it carefully out of the tin and slice.
7. While the roast is baking, make the gravy. In a small bowl, mix miso and hot water and mix well. Set aside.
8. In a large saucepan on medium-high heat, sauté shallots/onion in oil until translucent. Add flour and mix well; this will become pasty and dry.
9. Slowly start adding stock while stirring continually. Add a little bit at a time until everything becomes well mixed and there are no lumps. Use a balloon whisk to get rid of floury lumps if necessary. Lower heat to medium-low and simmer until sauce is thickened, stirring often.
10. Stir in miso, taste and season with salt and black pepper if necessary. Keep warm until ready to serve with the roast.

Dessert
 
 

Poached Pears in Red Wine with Cinnamon or This dessert is not only great in taste but beautiful to look at.
 

             
Serves 4
Time:                    1 hour, including 20 minutes chilling time
                   
     
Ingredients:
4 firm pears
2 tbsp agave or maple syrup
300ml/10fl oz vegan red wine
Pinch of cloves
Stick of cinnamon OR 1 star anise

 
Method:
1. Peel the pears, leaving them whole but keeping the stalks.
2. Put wine, syrup, cinnamon and cloves in a saucepan. Bring to the boil, add pears and simmer gently for 30-40 minutes or until pears are cooked right through.
3. When ready, remove them from a pan with a slotted spoon and place them in individual dishes. Remove cinnamon stick. If using star anise, keep it for garnish.
4. Vigorously boil liquid in pan until it has reduced by half. Pour syrup over pears and chill.

Californian walnut pasta salad...

Serves 8 to 10

-500gm macaroni/elbow pasta-1/4 cup good quality olive oil
-Juice from 2 lemons
-1 cup fresh parsley-Fresh black pepper
-2 avocados, diced
-1 carrot, grated
-2 cups baby spinach
-1 cup cherry tomatoes, diced
-1 cup californian walnuts

-Cook and drain pasta until al' dente, run under cold water
-Whisk the olive oil, lemons, pepper and parsley together
-Toss the pasta with the dressing, then gently mix the carrot, spinach, cherry tomatoes and walnuts
-Top with avocado and serve chilled

Christmas salad....

Serves 6-easily doubled

-5 or 6 large cos lettuce leaves
-2 mangoes, cheeks cubed
-3 nectarines, pitted and sliced
-1 peach, pitted and sliced
-2 oranges, peeled and diced
-1 cucumber, diced
-2 celery stalks, sliced thinly
-3 cups rocket
-1 cup baby spinach
-1/2 head radicchio, shredded
-1/2 cup coriander
-1/2 cup parsley
-1/2 pomegranate, pith removed- Use the seeds!
-1/2 cup mixed raw sesame, sunflower and pumpkin seeds

Dressing
-Juice of 1 lemon
-Juice of 1/2 lime
-Juice of 1/2 orange
-1 tbsp good quality EVOO

-Line a large bowl with the cos leaves
-In a separate bowl, gently toss all of the salad ingredients together except the pomegranate seeds
-Whisk dressing and gently pour over the salad, just before serving
-Top with pomegranate seeds and mixed seeds
